Simple Shrimp Ceviche Recipe

1lb shrimp (peeled, deveined)
3 lemons
3 limes
1/2 c cilantro (chopped)
1/4 c red onion (minced)
1 jalapeño (diced)
1 avocado (diced)
1 tomato (diced)

Boil shrimp for 3 minutes, let cool and then dice. Squeeze juice from lemons and limes and place diced shrimp in. Let sit for 15 minutes.

To the bowl of shrimp add tomatoes, onion, cilantro, jalapeño, juice from two limes and 1/2 teaspoon salt. Stir to combine. Let sit for 10 mins.

Right before serving stir in the diced avocado. Taste and season with more salt as desired.
